Name: Pesto Fondue Serves: 6-8 portions Category: Fondue, Hors D Cuisine: Italian Source: SP Ingredients: 1 clove garlic, halved 1 cup white wine 1 1/2 cups grated Fontina cheese 1 1/2 cups grated Swiss or Emmentaler Cheese 1/2 cup Romano cheese 2 to 3 Tbs flour 1/2 cup basic Pesto (see separate recipe) Rub a fondue pot or ceramic heat-proof pot with garlic. Add wine and heat until hot. Toss cheeses with with flour to coat. Add cheese to pot a handful at a time, stirring constantly and waiting until each addition melts before adding the next. Check consistantcy and add more wine or cheese, if needed. Just before serving swirl the pesto on the top of the fondue in a decorative pattern. Serve with 1 inch pieces of fried sweet Italian sausage, cubed of French bread and cherry tomatoes for dipping.
