This recipe is part of the legacy of LaTeDa Caterers, the business we started in Jupiter, FL in 1992. It's a classic "seemed like a good idea at the time" story and it lasted until we re-discovered that the food service business is not as much fun as it sometimes appears. The first discovery was 20 years earlier in Manchester, VT when we opened the Snowy Owl, a country inn that became a burger, beer and booze joint. Name: Classic Puffs Serves: makes 70 small or 40large Category: Hors D'Oeuvres Cuisine: Source: Ingredients: 1/4 # butter (1 stick) salted butter 1 cup boiling water Bring water and butter to boil. Add 1 cup flour. Cook, stirring with wooden spoon until mixture forms a soft ball. Let cool 5 minutes. Add 4 large eggs (or 5 medium), one at a time, beating with an electric mixer. Beat until smooth. Preheat oven to 425F. With mixture in pastry bag..pipe puffs unto baking sheet. Bake about 20 minutes, or until golden. Cool and freeze. Thaw and reheat at 350F until crisp. Fill and refrigerate until served. (chicken salad, ham salad, tuna salad or whatever) For cheese puffs..add 2 tsp Dijon mustard with eggs plus 1/2 cup grated Parmesan Cheese and 1/2 cup grated swiss cheese. Bake, freeze and re-heat.
