See: "Puffs" Name: Shrimp Toast Serves: 16 pcs Category: Hors D'oeuvres Cuisine: Source: Ingredients: 1/2 # raw shrimp 5 water chestnuts, minced 1/8 # boiled ham, minced 1 egg, slightly beaten 1 Tbs Italian parsely, chopped 2 Tbs scallions 1 tsp salt 1/4 tsp sugar 1 Tbs corn starch 7 slices white bread, 2 days old 2 cups peanut oil Clean shrimp, and mince Mix chestnuts, ham, egg, parsely, scallions, sugar, salt, cornstarch. Trim crusts from bread. Heat oil to 375F in skillet or elctric frypan. Spread 1 Tsb of shrimp mix on each slice, Cut in triangles and fry face down (shrimp side down) in oil for about 15 seconds, until lightly brown...turn and fry 10 seconds on other side. Remove carefully and drain on paperbags or newspapers covered with a paper towel. Serve when cool..or freeze. Keeps 3 months at 10F
