Cranberry Relish Yield: approximately 5 cups Note: this recipe can be doubled. 1 cup water 2 cups sugar 3 cups cleaned fresh cranberries (1 bag), rinsed and drained. 1 medium sized un-peeled naval orange, cut into chunks and ground in food processor. 1 tsp ground ginger 1/4 tsp ground cinnamon 1/4 tsp ground cloves 1/4 tsp ground cardamom 1/4 cup orange liquer (Triple Sec or Grand Marnier) In a large pot, combine water and sugar. Heat, stirring until sugar is dissolved, Add cranberries and simmer, covered, for 10 minutes. Un-cover and simmer another 10 minutes, stirring occasionally Add processed oranges to pot along with the ginger, cinnamon, cardamom and cloves. Simmer about for 20 minutes, stirring often. Chill before serving.
