Ingredients: 4 eggs, beaten, well (use electric mixer) 2 cup sugar 2 cup flour 2 tsp baking powder 1 pinch of salt 1 milk, scalded 2 sticks melted butter, divided (see below) 2 tsp vanilla extract Beat eggs in bowl. Add sugar. Gradually, salt, baking power and flour, mixing well. Add 6 Tbs melted butter to scalded milk. Add milk to batter, then add vanilla. Mix well. Line a cake pan with waxed paper, wax side down. Pour batter into pan evenly. Preheat oven to 350F and bake about 15-20 minutes, or until tester comes out clean. Topping: 2 cups coconut Add coconut to remainder of melted butter. Mix to blend. Add 1 1/2 cups dark brown sugar. Add 1 cup of heated, heavy cream. Mix well and spread evenly over cooked cake. Brown under broiler until it bubbles and topping starts to brown. Remove and let cool before serving. Cut into squares.
