St Bart's Fruit Medley Each January, for ten years, we escaped from the frigid north to the Caribbean island of St. Barthelemy. This was years before the small French island was discovered by the rich and famous. A chef we met served this wonderful dessert but would not reveal his recipe. We came up with something even better. Pre-heat oven 425 F FOR THE SYRUP: Combine the following...bring to a boil, reduce heat and simmer, stirring occasionally for 10 minutes or until slightly thickened: 1/2 cup water 3/4 cup sugar 1 cinnamon stick 6 cloves 1/8 teaspoon ground nutmeg STRAIN AND RETURN TO POT...ADD: 1/4 cup raisins 3 Tbls. melted sweet butter 1/3 cup dark rum, Stir well to mix.. INTO A BUTTERED 9 X 13 CASSEROLE DISH ADD: 6 bananas, peeled and sliced long-ways.. Cover with 2 Cups of fresh diced pineapple (or one 10-oz can of drained pineapple chucks) Spoon syrup over Sprinkle with chopped pecans Bake for 15 minutes 425F Makes 6 servings Great with ice cream or whipped topping.
