Name: Tom's Cheesecake Serves: 16 slices Category: Dessert Cuisine: American Source: Frema Ingredients: 4- 8 oz containers whipped cream cheese 16 oz sour cream 1/4 pound (1 stick) butter 5 eggs 2 Tbs cornstarch 1 1/4 cups sugar 1 1/4 tsp vanilla 1 tsp lemon juice Allow cream cheese, sour cream, butter and eggs stand at room temperaure for one hour. Preheat oven to 375F. In a large mixing bowl, with electric mixer, blend cream cheese, butter and sour cream together. Add cornstarch, sugar, vanilla and lemon juice. Mix on high speed for one minute to blend well. Beat in eggs, one at a time. Beat until well blended. Pour mixture into greased 9 1/2 inch springform pan. Place pan in large roasting pan and fill larger pan with warm water until it comes up half-way on the outside of the springform pan. Bake one hour, or until top is golden brown. Turn off oven and open oven door. Let cake sit for one hour. Remove cake from oven and let sit 2 hours to cool. Cover and refrigerate for at least 6 hours before serving. Top with berries, if desired.
