Name: Chicken with Yellow Rice & Black Beans Serves: 2 see note Category: Poultry Cuisine: Cubano Source: TomD Ingredients: NOTE: Use Paella cooker with small pan. 2 T olive oil DIRECTIONS: 1/2 fryer, cut up Brown chicken in oil (washed, dried,salt and peppered) 2 Cl chopped garlic Remove chicken, pour off oil. 1 medium onion, chopped Add 2 Tbs olive oil, saute garlic and onion til soft. 1 cup rice 2 cups chicken broth Add liquids, deglaze and stir 1 cup water 1/2 cup white wine 1 tsp salt 1 Goya Saison Afrazon 1/2 tsp Alternative Seasoning 1/2 Charlie's Sodium free season 1 bay leaf Add spices, stir and cover with foil. Simmer 20 minutes adding water to keep moist. 1 can Kirby black beans, drained and rinsed. 1 small jar Piementos Rojas Dulce (pimentos) Remove chicken, stir in beans and jar of peppers. Replace chicken on top and serve (or re-cover with foil and keep warm for up to an hour. NOTE: to make for 4 use whole chicken in same pan to make for more use big pan and more stuff
