Pan: use 10" cast-iron skillet 4 inches deep Ingredients: (quick directions. see below for details) 1/2 pound sliced mushrooms. Saute mushrooms in butter and set aside ================= 5 chicken thighs Brown chicken in oil 5 mins per side 3 tbs olive oil Remove chicken to plate 4 tbs butter salt and pepper ================= 1/2 cup chopped onions 3 cloves garlic, minced Add onions and garlic and saute 3 mins ================ 1/2 cup white (or red) wine Add wine and cook til evaporated 1 tablespoon flour Stir in flour and cook 3 mins ===================== 1/4 tsp red pepper flakes Add flakes, and broth. 1 cup boiling chicken broth Flambe brandy and add 2 tbs brandy 1 1/2 cups peeled, seeded, chopped tomatoes Add tomates, herbs and or 1 large can, drained sauteed mushrooms 1 tbs parsely 3/4 tsp dried tarragon ====================================== Serve over pasta and pass grated Parmigano --------------------------------------- Directions: Wash and dry chicken pieces. Saute chicken in hot oil and butter. Salt and pepper the chicken. Cover and simmer over low heat for 15 mins. Remove chicken pieces and keep warm. Add onions and garlic to pan and saute for 3 mins. Add wine and stir until evaporated. Blend in flour, then the broth. Heat brandy, set aflame and pour into pan. When flames die, add tomatoes, parsley, tarragon. Simmer 10 minutes. Saute the mushrooms for 5 minutes. Add to the sauce and return the chicken pieces to the pan. Cook 10 minutes or until chicken is tender.
