Name: Tom's Kahuna Chicken Serves: 4 Category: Poultry Cuisine: Source: gulfshore delights Ingredients: 1/4 cup flour 1 Tbs dried Tarragon 1 tsp salt 1/2 tsp black pepperr 4 skinless, boneless chicken breasts 4 Tbs unsalted butter 1 Tbs vegetable oil 1/2 cup brandy 1 cup chicken broth 3 Tbs Dijon mustard 2 Tbs lemon juice 1/4 cup drained capers Combine flour, tarragon, salt and pepper. Dredge chicken breasts in flour mixture. Shake off excess flour. In large skillet, heat butter and oil to medium. Saute chicken breasts for 3 minutes on each side until lightly browned. Flambe chicken in brandy. (Pour brandy over chicken and light with match) Shake pan until flames subside. Mix chicken broth, mustard and lemon juice. Pour over chicken and stir. Bring to boil then cover and reduce heat and simmer 7 to 10 minutes, turning check once. Arrange chicken on serving platter. Boil sauce for a few minutes to thicken. Pour sauce over chicken and sprinkle with capers
