Name: Pork Tenderloin with Honey-Bourbon Sauce Serves: 6-8 Category: Entree Cuisine: BBQ Source: CookingLite Ingredients: 3 - 3/4 pound pork tenderloins (2.25 pounds of meat) Marinade: 1/3 cup diced onion 1/2 cup lemon juice 1/2 cup bourbon whiskey 1/4 cup honey 1/4 cup soy sauce 1 Tbs minced gingerroot 2 Tbs olive oil 4 cloves garlic, minced Salt and pepper Vegetable cooking spray 3 Tbs flour 1 1/4 cups water Trim excess fat from pork. Combine marinade ingredients and let sit for 30 minutes to blend flavors. Place tenderloins in plastic bag. Pour in marinade, seal and marinate meat for 1 hour. Remove pork from bag, reserving marinade. Sprinkle salt and pepper on pork. Preheat grill to 375F with fire on one side only. Place pork on other side of grill from fire, cover and bake, basting frequently with marinade until meat is 160F internal. When done, cut the pork into 1/4 inch slices and keep warm. Heat remaining marinade in saucepan and stir in flour and water, simmering until slightly thickened. Serve pork slices with rice or mashed potatoes and gravy.
