Name: Roast Pork with Lime Rum Sauce Serves: 10-12 Category: Pork Cuisine: Caribbean Source: AmGourm Ingredients: Directions: 10-12 pound boned and rolled Roast pork on rack at 350* for 1 hour, pour Pork Loin off fat. 2 cloves minced garlic Combine next 7 ingredients and 2 tsp ground ginger pour over the roast. Roast 30 minutes 2 tsp cumin 1/2 tsp nutmeg 1 tsp ground coriander 1 cup dark brown sugar 1/2 cup Meyers Rum 2 cups chicken stock Combine next 3 ingredients and pour 1/2 cup lime juice around the roast. Roast 1 more hour 2 tbs soy sauce or until internal temp reaches 160F Remove from oven. Place pork on platter and tent to keep warm. Strain pan juices into saucepan and bring to boil. Mix 2 Tbsp corn starch or flour with 2 tbsp water and add to saucepan with drippings.. Bring to boil, then simmer until thicked slightly. Strain and serve as sauce with sliced pork.
