Name: Sunshine Chicken Serves: 8 Category: Poultry Cuisine: Tropical Source: T.Parvis INGREDIENTS: 8 skinned chicken legs 8 skinless bonless thighs salt & pepper Dried basil 1/2 C soy sauce 1/2 C catsup 1/4 C honey 1/4 C vegetable oil 2 cloves garlic, crushed 1 order poached oranges (see below) Directions: Preheat oven to 350F. Place chicken pieces in baking pan. Season with salt and pepper and sprinkle with basil. Combine soy sauce, catsup, crushed garlic, honey and oil in a small sauce pan. Baste chicken with sauce and bake for one hour, basting frequently. Bring leftover sauce to a boil, then turn off heat. POACHED ORANGES 3/4 water 1 1/2 C sugar 3 Tbsp slivered orange zest 6 navel oranges, peeled and separated into pieces with white membrane removed 2 Tablespoons Grand Marnier (or other orange liqueur-optional) DIRECTIONS: In a saucepan, bring water, sugar and orange zest to a boil. Reduce heat and simmer for 8 minutes stirring until slightly thickened. Add orange pieces and simmer for 3 minutes to warm the oranges. Add Grand Marnier. Remove oranges and add leftover (boiled) basting sauce to the liquid... Serve Chicken with Poached Oranges....Serve sauce on the side after spooning a little over the chicken... Great with Texmati Rice and a green veggie.. Can be doubled..We love thighs only... Reminds us of Duck L'Orange.
