1 Tbsp olive oil 1 Cup chopped onion 1 Cup chopped Green Pepper 2 Cups cooked rice 1 can (10oz) RO-TEL diced tomatoes and green chilis 1 can (15 oz) Black Beans, drained and rinsed 1 tsp ground cumin 1/4 tsp ground coriander Heat oil in large skillet. Saute onion and green pepper until tender, about 8 minutes. Stir in remaining ingredients and heat, stirring.. Makes 6 servings.
