Name: Tom's Chili Serves: 6-8 Category: 1-dish Cuisine: Tex-Mex,SW Source: tom Ingredients: 3 Tbs olive oil 4 cloves garlic, chopped 1 large onion, chopped 1 green pepper, seeded and chopped 3 pounds ground sirloin 3 Tbs chili powder 1 tsp cayenne pepper 2 Tbs ground Cumin seed 2 Tbs dried parsely 2 Tbs dried Basil leaves 2 Tbs Paprika 1 Tbs Oregano 2 Bay leaves 1 large (28oz) can of tomatoes 1 bottle of beer (good stuff) 1/2 cup red wine 2 Tbs salt 2 tsp ground black pepper 2 cans red beans, drained(optional) Directions: In a large, cast iron pot or dutch oven saute garlic, onions and green pepper for a few minutes, until soft. Raise heat, add beef, and brown meat, stirring, until no longer pink. Add remaining ingredients, except beans. Bring to a boil, stirring, then reduce heat and simmer, stirring occasionally for two hours. Taste and correct seasoning to make it good. Stir in beans, if desired, and serve. OR: Let cool, cover, and refrigerate overnight. Reheat and serve with chopped raw onion and cooked rice or over cooked spaghetti. For Cincinnati Chili add cinnamon to taste.
