Name: Sherried Chicken with Noodles Serves: 4-6 Category: Casserole,Chicken Cuisine: American Source: Ingredients: DIRECTIONS: 1 3-pound chicken, cup up. - Boil chicken in broth until 3 cups chicken broth very tender (30 to 40 mins) 1/2 pound egg noodles - Strain and save broth. 6 Tbs butter - Cook noodles, drain and set aside 6 Tbs flour after tossing with some butter Freshly grated parmesan cheese or oil to prevent sticking. 1/2 tsp paprika - In a large saucepan heat butter, 1/3 cup good sherry add flour and whisk to make a 1/4 pound mushrooms, sliced,sauteed in roux, cook 3 mins. butter. - Add hot broth, heat and whisk Salt and pepper to taste to bring to boil until smooth. - Turn off heat, add s&p, paprika and sherry. - Remove meat from bones and add to sauce with mushrooms. - Serve over noodles topped with grated cheese. NOTE: To make a casserole, cook noodles al dente; place in buttered casserole, top with chicken/mushroom sauce and cheese. Bake 20 minutes at 400F until golden and bubbly.
