Name: Pasta with Oil and Garlic Serves: 6 Category: Pasta Cuisine: Italian Source: SilPal Ingredients: 12 cloves garlic 1/4 cup Extra Virgin Olive Oil 4 quarts water 1 1/2 Tbs salt 1 pound pasta (Capellini, Ziti, Penne, whatever) 1 1/2 cups chicken stock or broth 1 cup finely chopped Italian Parsely freshly ground black pepper grated Parmesan cheese Peel garlic cloves. Mince six of them and set aside. Slice remaining garlic. Saute the sliced garlic in oil until golden. Cook pasta in salted water until just done. Do not overcook. Drain pasta well and return to the pot. Add chicken broth and stir well. Place over medium heat and simmer a few minutes to let pasta absorb most of the broth. Stir in the heated oil and sliced garlic, then the minced garlic and parsely. Toss well. Divide pasta evenly among heated plates or soup bowls. Pour remaining broth over pasta and serve immediately accompanied by ground pepper and cheese to taste. NOTE: Optional additions include shrimp, basil and pieces of poached chicken breast.
