Name: Bandito Casserolo Serves: 4-6 Category: Casserole Cuisine: Italian Source: TomD Ingredients: 1 8oz package Bow Tie Pasta 3 tbs Olive Oil 2 whole chicken breasts, skinned, boned and trimmed of fat and sinues, then cut in 1 inch squares 1/2 pound fresh mushroom, sliced 1-26 oz jar Paul Newman's Own Spicy Diavolo Sauce 1-15 oz can Progresso black beans, rinsed and drained 8 oz shredded Mozzarella Cheese Directions: Heat oven to 375 F Cook pasta according to package directions. Heat oil in large fry pan and saute chicken and mushrooms. Lightly salt and pepper the mixture while stirring for about 5 minutes. Pour the jar of sauce over the mixture and stir to combine. Add drained beans and stir. Arrange layer of pasta in the bottom of a 10 by 14 inch oven proof dish. Pour sauce carefully over the pasta and spread but do not stir. Sprinkle the cheese on top. Bake in the middle of a 375 F oven for 10 to 15 minutes, or until the cheese is melted and the sauce is bubbling.
