Name: Linguini al Funghi Serves: 4 Category: Pasta Cuisine: Italian Source: TomD Ingredients: 1/4 cup Extra vigin olive oil 2 cloves minced garlic 2 shallots, chopped 1 tsp dried basil 8 oz fresh mushrooms, sauteed in butter (do ahead, if desired) 12 oz linguni, cooked al dente 1 cup chicken broth Freshly grated Parmesan Cheese 6 leaves fresh basil Directions: Heat oil in frying pan and saute garlic and shallots until soft. Stir in sauteed mushrooms and dried basil. Set aside and keep warm. Cook and drain pasta. Add chicken broth to pot and toss. Stir in mushroom mixture and toss. Simmer for about 5 minutes, stirring, to reduce liquid to 1/2. Salt and pepper to taste. Serve with cheese and basil leaves.
