Name: Penne with Mushrooms and Roasted Peppers Serves: 4 Category: Pasta Cuisine: Source: TomD Ingredients: 1 large sweet red pepper, roasted, peeled and cut in julianne strips 8 oz fresh mushrooms, sliced 1 large or 2 small shallots, minced 2 cloves garlic, minced 4 Basil leaves, torn in pieces 2 Tbs Extra Virgin olive oil 8 oz penne, cooked al dente 1/2 cup chicken broth In large fry pan, heat oil, and saute mushrooms until juice starts coming from them. Add shallot, garlic, basil and peppers and saute for 3 minutes. Cook and drain penne, put back in pot and add chicken broth. Bring to simmer. Add mushroom mixture and stir. Season to taste. Just before serving swril in 3 Tbs low-fat Riccota Cheese.
