Name: Pasta in Vodka Sauce Serves: 6 Category: Pasta Cuisine: Italian Source: Gourmet Oct94 Ingredients: 1 medium onion, chopped fine (1 cup) 2 ribs celery, chopped fine (1 cup) 3 cloves garlic, minced 1/4 cup olive oil 1/2 pound thinly sliced prosciutto, chopped fine 1/4 cup vodka 1 28 ounce can crushed tomatoes 1/4 tsp cayenne pepper 1 Tbs chopped fresh parsely leaves 1 Tbs dried basil, crumbled 3/4 Tbs died oregano, crumbled 1 cup half and half 1 pound rigatoni, penne, or other tubular pasta DIRECTIONS: In a large, heavy skillet, over medium heat saute onions, celery and garlic in oil, stirring, until softened, about 5 minutes. Add prosciutto and vodka and simmer until almost all liquid evaporates. About 5 minutes. Add tomatoes, cayenne and herbs. Simmer 10 minutes. Stir in half and half and simmer 3 minutes. Cook pasta al dente and drain. In a large bowl toss pasta with sauce. Serve with grated cheese, if desired.
