Asiago Cream Sauce Makes 4 1/2 cups 4 tablespoons unsalted butter 1/4 cup diced onions 1 teaspoon chopped garlic 2 tablespoons all purpose flour 1 3/4 cups chicken broth 2 1/4 cups heavy cream 1/2 teaspoon salt 1/4 teaspoon black pepper pinch cayenne pepper 1/4 cup white wine 1/4 cup shredded asiago cheese 2 tablesoons butter In a saucepan melt butter. Add onions and chopped garlic. Saute over medium heat for 5 minutes. Add flour and mix thoroughly. Cook gently for 4 minutes, then whisk in the chicken broth, let thicken while stirring occasionally and add the cream and reduce for 20 minutes. Add the salt, pepper and cayenne. Whisk in white wine and let simmer for another 5 minutes. Turn off the flame and whisk in the other butter and asiago cheese. Correct seasonings. Cool in refrigerator.
