Reef Grill Taco Courtesy of Dr. Richard A. Dube MD GP, Stuart FL This is an appetizer served at the Reef Grill in Juno, Beach, Fl. Chef Mike conceived this unusual combination of textures and flavors. Serves 4 One 12" flour tortilla Exta Virgin Olive Oil Georgia-style BBQ sauce (Sonny's or Tom's) Shredded Mozzarella cheese Finely chopped sun-dried tomatoes (soften in hot water, then drain and chop) Sliced portabello mushrooms Cleaned shrimp Feta Cheese Saute tortilla in olive oil hot large pan. Place tortilla on large cookie sheet. Spread thin layer of BBQ sauce on top. Sprinkle generously with mozzarella cheese. Sprinkle on sun-dried tomatoes Saute mushrooms and shrimp in oil until shrimp are pink. Sprinkle on top of tortilla. Top with feta cheese. Place under broiler until cheese is melted and slightly browned, about 3 minutes. Serve over fresh greens topped with mild Chipotle mayonaise.
