Bake, 350 degrees, covered for 45 minutes. Stir and bake, uncovered, 15 minutes or until liquid is absorbed and rice is tender, adding more water if it gets too dry and rice it not tender. NOTE: To double make two separate batches and combine to serve. OPTION: Add a can of black beans, drained and rinsed for the last 15 minutes of cooking.
