Irish Soda Bread Serves: 1 loaf Category: bread Cuisine: irish Source: o'connor Ingredients: Preheat oven to 375F 3 C flour 1/2 C sugar 1 tsp Salt 1 tsp baking soda 3 tsp baking powder 1/4 tsp cream of tartar 1 C buttermilk 1/2 C sour cream (or yogurt) 2 eggs 5 Tbsp softened sweet butter (or margarine) 1 3/4 C golden raisins Mix dry ingredients in large bowl. Mix liquid ingredients in other bowl. Pour liquid into dry and mix to make smooth batter. Pour batter into buttered 11" cast iron skillet. Bake in 375F oven for 15 minutes, then reduce to 350F and continue cooking for 45 minutes or until golden brown and knife inserted into center comes out clean. Cool pan 20 minutes, then invert skillet and place on serving platter. Makes one large loaf.
