Name: Polenta Serves: 4 Category: Side dish, vegetable Cuisine: Italian Source: Mike&Ciel Ingredients: 1 cup yellow cornmeal (coarse grind masa harina) 3 1/2 cups cold water 1 tsp salt Mix ingredients in microwavable 2 1/2 quart bowl. Micro uncovered on HI for 10 minutes, stirring every 3 or 4 minutes. Stir well, cover and Micro another 10 minutes, stirring every 3 minutes. If polenta becomes too dry, stir in 1/4 cup water. When finished polenta should be smooth and thick. If too watery, continue cooking, uncovered, and a few minutes until it thickens. Serve warm with White Kidney Beans on top or with Marinara Sauce. ---------------------------- White Bean Topping 2 cans white kidney beans, drained and rinsed 4 Tbsp olive oil 1 medium onion, chopped 4 gloves garlic, chopped Salt to taste 1 cup water. Saute onion and garlic in oil until soft, about 5 minutes. Add beans and water and bring to boil. Stir, reduce heat to simmer and cook gently for 20 minutes, stirring to keep it from sticking to the bottom of pan, or until beans become lightly thickened. Serve over Polenta.
