Name: Tom's Rice and Beans Serves: 4 Category: Vegetable Cuisine: Cubano Source: TomD Ingredients: 1 cup converted rice 2 cups water 2 Tbs olive oil 1 tsp salt 1 packet Sazon Goya Con Culantro Y Achiote 1 can black beans, washed and drained 1/2 small onion, minced 2 cloves garlic, minced 1 Tbs olive oil Make rice: Bring water to boil in saucepan with tight-fitting lid. Add rice, olive oil, salt and seasoning packet. Stir well, reduce heat to low, cover and simmer for 25 minutes. Remove from heat and stir. Add beans to pot and stir gently into rice. In fry pan, saute onion and garlic in oil until soft, about 5 minutes. Stir mixture into beans and rice. Salt and pepper to taste. Serve warm with Tabasco sauce to taste.
