This is from Michelina's Restaurant in Stuart, FL 2 vine-ripened Florida tomatoes, quartered and then halved Sweet onion (Vadalia or Walla Walla), sliced from stem to stem, then separated. Thinly sliced peeled cucumber Extra virgin Oilive Oil (Colavita is best) Alessi White Balsamic Vinegar Salt and Pepper to taste Combine all ingredients in a bowl and let marinate at room temperature for 20 minutes before serving. The salt will bring out liquid from the veggies to make a great dipping sauce. Dip with Tuscan Bread, if available.
