Name: Cuban Black Beans Serves: Makes pot Category: Beans Cuisine: Cuban Source: LA Times Ingredients: 1 lb dried black beans 2 onions 2 green pepper Olive oil 3 cloves garlic 1/2 tsp ground Cumin 1 bay leaf 1/2 cup canned tomato sauce Salt 1 Tbs wine vinegar Chopped onion Rinse beans and soak overnight in heavy saucepan with enough water to cover beans by 2 inches. Next morning... Cut 1 onion and 1 green pepper in half and place in pot. Bring to boil, stir, cover and simmer for 1 1/2 hours. Heat 5 Tbs olive oil in skillet. Chop remaining onion and green pepper and saute with garlic for 5 minutes or until onion is soft and starting to get golden. Add cumin and bay leaf to skillet and simmer 5 minutes. Add tomato sauce and simmer another 5 minutes. Remove bay leaf and puree mixture in blender or Cuisinart. Add to beans. Add water if beans are too thick. Season to taste with salt, about 1 tsp. Remove and discard onion and pepper pieces from beans. Simmer, stirring often, until beans thicken and are tender. Turn off heat. Add 1 Tbs wine vinegar and float a little olive oil on top. Serve with white or yellow rice, and chopped onion, if desired..
