Name: Potatoes Anna Serves: 6 Ingredients: 4 large Idaho baking potatoes, peeled, sliced thinly and stored in a bowl of ice water.( to keep them from turning brown) 1 medium onion, grated Dry slices on a towel. Heat 2 tbs butter in a large cast iron skillet. Arrange slices, overlapping around the skillet in layers. Sprinkle each layer with salt, pepper, onion and a bit of butter. You should have about 5 layers when you run out of slices. Place a layer of foil over the top and weigh down with a plate or something heavy to compress the slices while they are cooking. Place skillet in a 375F oven for one hour. Invert pan on a large plate. Slice like a pie to serve.
