Name: SOUFFLE STUFFED TOMATOES Serves: 4 Category: Vegetable Cuisine: Source: Ingredients: 4 medium large tomatoes (scoop out seeds and pulp) 1 Package Stouffer's frozen corn souffle (thawed) 2 small green pepper cut into very small pieces (you can use red, yellow or jalapeno peppers) dijon mustard salt and pepper grated cheddar and parmesan cheese Cut off top of tomatoes.. seed and remove pulp leaving a sturdy tomatoe shell Coat inside with mustard Sprinkle with a teaspoon of chopped pepper Spoon in thawed souffle until 2/3 full Lightly salt and peppper and top with grated cheese Place in buttered baking dish and bake 45 minutes at 350 degrees. Garnish with fresh chopped parsley.
